Roasting rather than pan-frying

Shrimp tacos are usually made in a skillet, which works but demands attention — a pan cooks unevenly, and the shrimp at the edges are done well before the ones in the middle.

A hot sheet pan cooks all of them at the same rate and frees you to make the slaw while they roast. Eight to ten minutes at 400°F is enough, and because the pan is doing the work there is no crowding, no batch cooking, and no moment where you are trying to turn thirty shrimp individually.

The order things happen

Everything lands within about ten minutes, so the sequence matters more than any single step.

  1. Oven on, shrimp seasoned400°F, and the shrimp dried and tossed in spice while it heats.
